  • Author: Clara Joyner
  • Total Time: 15 minutes + freezing time
  • Yield: About 12–14 bites
  • Diet: Vegan

Description

These Frozen Banana Snickers are a creamy, chocolatey, no-bake treat layered with peanut butter, gooey date caramel, and dark chocolate. Naturally sweet, dairy-free, and packed with flavor, they’re the perfect guilt-free dessert for hot summer days.

Ingredients

2 large bananas – ripe but firm, for best texture.

¼ cup creamy natural peanut butter – unsweetened, for authentic flavor.

4 Medjool dates – pitted and blended for smooth, caramel-like sweetness.

2 tablespoons chopped roasted peanuts – adds crunch and that Snickers vibe.

1 cup dark chocolate chips (60–70% cocoa) – melts easily and hardens beautifully.

1 teaspoon coconut oil – creates a glossy, smooth chocolate coating.

Flaky sea salt (optional) – a sprinkle brings out all the flavors.

Instructions

  • Prepare the Bananas: Slice bananas into ½-inch rounds and arrange half on a parchment-lined tray.

  • Add Peanut Butter: Spread ½ teaspoon peanut butter on each slice.

  • Make the Date Caramel: Blend dates with a splash of warm water or milk until creamy. Spoon a small amount over each peanut butter layer.

  • Top & Freeze: Add the remaining banana slices to form “sandwiches.” Freeze for 1 hour, until firm.

  • Melt the Chocolate: Combine chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until smooth.

  • Dip the Bites: Using a fork, dip each frozen banana sandwich into the melted chocolate. Sprinkle chopped peanuts and sea salt before the coating hardens.

  • Freeze Again: Return to the freezer for about 30 minutes, or until fully set.

  • Enjoy: Let thaw for 1–2 minutes before eating for the perfect creamy-crunchy texture.

Notes

Storage: Keep in an airtight container in the freezer for up to 2 months.

Vegan Option: Use dairy-free dark chocolate.

Nut-Free Option: Replace peanut butter with sunflower seed butter and top with toasted coconut or pumpkin seeds.

Pro Tip: Let the bites soften slightly before eating to get that candy-bar feel.
