Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • â…“ cup brown sugar
  • 24 oz cream cheese
  • 1 cup sour cream
  • Âľ cup granulated sugar
  • 3 large eggs
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ÂĽ tsp ground nutmeg
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press firmly into the bottom of the pan.
  3. In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar and brown sugar, blending until combined.
  4. Incorporate sour cream, then add eggs one at a time, mixing well. Add ginger, cinnamon, nutmeg, and vanilla, and blend until smooth.
  5. Pour the filling over the crust, smoothing the top. Bake for about 60 minutes until edges are set.
  6. Turn off the oven and let the cheesecake cool in the oven for an hour.
  7. Once at room temperature, cover and refrigerate for at least 4 hours or overnight before serving.

Notes

For a tangy topping, whip additional sour cream with sugar and vanilla before serving.
