- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- â…“ cup brown sugar
- 24 oz cream cheese
- 1 cup sour cream
- Âľ cup granulated sugar
- 3 large eggs
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ÂĽ tsp ground nutmeg
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press firmly into the bottom of the pan.
- In a large bowl, beat cream cheese until smooth. Gradually add granulated sugar and brown sugar, blending until combined.
- Incorporate sour cream, then add eggs one at a time, mixing well. Add ginger, cinnamon, nutmeg, and vanilla, and blend until smooth.
- Pour the filling over the crust, smoothing the top. Bake for about 60 minutes until edges are set.
- Turn off the oven and let the cheesecake cool in the oven for an hour.
- Once at room temperature, cover and refrigerate for at least 4 hours or overnight before serving.
Notes
For a tangy topping, whip additional sour cream with sugar and vanilla before serving.
