Description

Ingredients

  • 1 packet active dry yeast
  • 1 tablespoon honey (or brown sugar)
  • 1 teaspoon salt
  • ¾ cup warm water
  • ½ cup baking soda
  • 4 cups water (for baking soda bath)
  • Egg wash or vegan alternative (plant-based milk and maple syrup)
  • Coarse salt (for sprinkling)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine gluten-free flour blend, active dry yeast, honey, and salt. Gradually stir in warm water until the dough comes together.
  2. Knead the Dough: Turn the dough onto a floured surface and knead gently for about 5 minutes until smooth.
  3. Let the Dough Rise: Place dough in an oiled bowl, cover, and let rise in a warm area for about 30 minutes until doubled in size.
  4. Shape the Pretzels: Punch the risen dough down, divide into 8 pieces, roll each into a long rope, and shape into pretzel form.
  5. Prepare the Baking Soda Bath: Boil 4 cups of water with ½ cup baking soda, and briefly drop pretzels into this solution.
  6. Brush with Egg Wash: Brush each pretzel with the egg wash (or vegan alternative) and sprinkle with coarse salt.
  7. Bake: Preheat oven to 425°F (220°C) and bake pretzels for 15-20 minutes until golden brown.

Notes

Serve with homemade mustard or cheese sauce for dipping. Can be stored at room temperature in an airtight container for up to 3 days.
