- 1 pound chicken thighs (or breasts)
- 1 cup jasmine or basmati rice
- 4 cups chicken broth
- 2 lemons (juiced and zested)
- 4 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 onion (chopped)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- Combine olive oil, juice of one lemon, garlic, salt, and pepper in a bowl. Add the chicken thighs and let them marinate for at least 15 minutes.
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
- Add the marinated chicken to the pot and sear for about 5 minutes on each side until golden brown.
- Stir in the rice, ensuring it’s coated, and pour in the chicken broth. Bring to a gentle boil.
- Lower the heat to a simmer, cover the pot, and cook for about 20 minutes. After 10 minutes, add lemon zest.
- After the cooking time, check the rice for doneness. If needed, let it rest for another 5 minutes off the heat and fluff the rice gently with a fork.
- Sprinkle freshly chopped parsley and serve warm with lemon wedges on the side.

Serve with grilled vegetables or a Greek salad for a complete meal. Consider topping with feta cheese or olives for added flavor.
