Ingredients

  • 1 pound chicken thighs (or breasts)
  • 1 cup jasmine or basmati rice
  • 4 cups chicken broth
  • 2 lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • Salt and pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Combine olive oil, juice of one lemon, garlic, salt, and pepper in a bowl. Add the chicken thighs and let them marinate for at least 15 minutes.
  2. In a large pot, heat some olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add the marinated chicken to the pot and sear for about 5 minutes on each side until golden brown.
  4. Stir in the rice, ensuring it’s coated, and pour in the chicken broth. Bring to a gentle boil.
  5. Lower the heat to a simmer, cover the pot, and cook for about 20 minutes. After 10 minutes, add lemon zest.
  6. After the cooking time, check the rice for doneness. If needed, let it rest for another 5 minutes off the heat and fluff the rice gently with a fork.
  7. Sprinkle freshly chopped parsley and serve warm with lemon wedges on the side.
