  • 1 cup cooked rice or quinoa
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 cup corn (fresh or frozen)
  • 2 cups greens (spinach or kale)
  • 2 tbsp sesame seeds (for garnish)

Instructions

  1. Cook the rice or quinoa as per package instructions, seasoning the water to enhance flavor.
  2. In a large skillet over medium heat, add a splash of oil and then the ground beef, breaking it up with a spatula. Cook until browned, about 7-8 minutes.
  3. Add diced onions and minced garlic to the beef, cooking until the onions are translucent—about 3 minutes. Then, add diced bell peppers and corn, cooking until the peppers soften, around 5 minutes.
  4. Stir in soy sauce and hot honey, allowing the mixture to simmer on low heat for a few minutes.
  5. Add greens and cook until wilted, about 2-3 minutes.
  6. Assemble your bowl by layering cooked rice or quinoa and topping with the beef and vegetable mixture, garnished with sesame seeds.
