Ingredients

- 2 Carrots, diced
- 2 Celery stalks, diced
- 1 Onion, diced
- 4 cloves Garlic, minced
- 1 Bell Pepper, diced
- 1 Zucchini, diced
- 6 Tomatoes, chopped (or canned diced tomatoes)
- 6 cups Vegetable Broth (low-sodium)
- 2 cups Kale or Spinach
- 1 can Beans (kidney or chickpeas), drained
- 1 tsp Thyme
- 1 tsp Oregano
- 1 Bay Leaf
- 2 tbsp Olive Oil
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables uniformly for even cooking.
- In a large pot, heat olive oil over medium heat. Add onions, garlic, and carrots, cooking for about 5 minutes until translucent.
- Add celery, bell pepper, and zucchini. Sauté for another 5-7 minutes until softened.
- Add vegetable broth and tomatoes, stirring to combine.
- Season with thyme, oregano, bay leaf, salt, and pepper. Bring to a boil then reduce to simmer for 30 minutes.
- In the last 5 minutes, add kale or spinach and the drained beans.
- Taste and adjust seasoning before serving.
Notes
Serve hot with crusty bread or a fresh salad for a complete meal.
