Description

A comforting and nutrient-packed vegetable soup loaded with flavors and healthy ingredients.


Ingredients

  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 4 cloves Garlic, minced
  • 1 Bell Pepper, diced
  • 1 Zucchini, diced
  • 6 Tomatoes, chopped (or canned diced tomatoes)
  • 6 cups Vegetable Broth (low-sodium)
  • 2 cups Kale or Spinach
  • 1 can Beans (kidney or chickpeas), drained
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1 Bay Leaf
  • 2 tbsp Olive Oil
  • Salt and pepper to taste

Instructions

  1. Wash and chop all vegetables uniformly for even cooking.
  2. In a large pot, heat olive oil over medium heat. Add onions, garlic, and carrots, cooking for about 5 minutes until translucent.
  3. Add celery, bell pepper, and zucchini. Sauté for another 5-7 minutes until softened.
  4. Add vegetable broth and tomatoes, stirring to combine.
  5. Season with thyme, oregano, bay leaf, salt, and pepper. Bring to a boil then reduce to simmer for 30 minutes.
  6. In the last 5 minutes, add kale or spinach and the drained beans.
  7. Taste and adjust seasoning before serving.

Notes

Serve hot with crusty bread or a fresh salad for a complete meal.
