Instructions
- Wash and peel the carrots. Slice them into sticks, coins, or your preferred shape.
- In a small saucepan, combine apple cider vinegar, hot honey, salt, black peppercorns, and crushed garlic over medium heat. Stir until dissolved.
- Once the pickling solution cools slightly, pour it over the carrots in a clean glass jar, ensuring they are fully submerged. Add bay leaves and optional spices.
- Seal the jar and refrigerate for at least 24 hours for optimal flavor.
