- 8 oz block feta cheese, crumbled
- 4 oz cream cheese, softened
- 2 tablespoons Greek yogurt or sour cream
- 2 tablespoons extra-virgin olive oil
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 cup strawberries, hulled and sliced
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 tablespoon olive oil (for roasting)
- Pinch of salt and black pepper
- Fresh mint or basil for garnish
- Pita chips, crostini, or sliced veggies for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a sheet pan and toss the hulled strawberries with 1 tablespoon olive oil, balsamic, honey, and a pinch of salt. Roast 15–20 minutes, until glossy and jammy. Let them cool slightly while you whip the feta.
- In a food processor or mixer, blend the feta, cream cheese, yogurt (if using), lemon zest, lemon juice, and 2 tablespoons olive oil until the mixture is smooth and fluffy, about 1–2 minutes. Stop to scrape the sides as needed for an even, aerated texture.
- Gently fold in 2–3 tablespoons of the roasted strawberry mixture to create ribbons of pink throughout. Reserve the rest for garnish or a sweet swirl on top.
- Season and fine-tune the flavor. Add a little more salt, pepper, or lemon juice to taste. If you want more sweetness, whisk in a touch more honey.
- Transfer to a shallow serving bowl. Drizzle with a touch of olive oil, scatter a bit of lemon zest, and garnish with reserved strawberry pieces and fresh mint. Serve with warm pita, cucumber rounds, and crisp vegetables.
