- 4 pieces Chicken Breasts
- 1 cup Pecorino Romano Cheese, grated
- 2 Fresh Lemons, zested and juiced
- ¼ cup Olive Oil
- 4 cloves Garlic, minced
- 1 cup Fresh Herbs (parsley and thyme), chopped
- Salt & Pepper, to taste
- 1 cup Breadcrumbs, preferably Panko
Instructions
- In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper to marinate the chicken. Let it sit for at least 15 minutes.
- Preheat your oven to 400°F (200°C).
- In a shallow dish, mix Panko breadcrumbs, grated Pecorino cheese, and chopped fresh herbs.
- Remove the chicken from the marinade and coat with the breadcrumb mixture.
- Place the coated chicken on a lined baking sheet and bake for 25-30 minutes or until golden brown.
- Let the chicken rest for a few minutes before serving. Enjoy with a wedge of lemon!
Notes
For richer flavor, consider using chicken thighs. Serve with a side of arugula salad or quinoa.
