Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or cooking spray.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Incorporate the buttermilk and lemon zest and mix until smooth.
  6. In a separate bowl, whisk together the flour, baking powder, and salt.
  7. Gradually add the dry mixture to the wet mixture, mixing just until combined.
  8. Gently fold in the poppy seeds.
  9. Pour the batter into the prepared loaf pan and smooth the top.
