- 6 cups Rice Krispies Cereal
- 4 cups Marshmallows (mini or regular)
- 4 tablespoons Unsalted Butter
- 1/2 cup Fresh Lemon Juice
- 1 tablespoon Lemon Zest
- A pinch of Salt
Instructions
- Melt the butter and marshmallows together in a large saucepan over low heat until smooth.
- Mix in fresh lemon juice and zest until well combined.
- Fold in Rice Krispies cereal gently to coat with the melted mixture.
- Grease a 9×9-inch baking dish and pour the mixture in, pressing down evenly.
- Cool for at least 30 minutes or refrigerate until set, then cut into squares and enjoy.
Notes
For a healthier option, use coconut oil instead of butter and honey or maple syrup instead of marshmallows.
