- 16 oz Cream Cheese, room temperature
- 1 cup Granulated Sugar
- 3 large Eggs
- 1 cup Heavy Cream
- 3 Earl Grey Tea bags
- 2 tsp Vanilla Extract
- 1 cup Blackberries, fresh
- 1/4 tsp Salt
Instructions
- Preheat your oven to 400°F (200°C).
- Grease a 9-inch springform pan with butter or cooking spray.
- In a saucepan, heat the heavy cream and steep the tea for 5 minutes; let cool.
- In a bowl, beat the cream cheese and sugar until smooth. Add eggs one by one.
- Mix in the cooled cream, tea, vanilla, and salt until combined.
- Pour the batter into the springform pan and bake for 50 minutes.
- Cool for 10 minutes, then remove from pan and let cool completely before refrigerating for at least 4 hours.
- Top with blackberries just before serving.

Avoid overmixing the batter to prevent cracks, and ensure all ingredients are at room temperature.
