3 medium sweet potatoes, peeled and cut into 1-inch cubes (about 4 cups)
2 tablespoons olive oil or melted butter
1/4 cup pure maple syrup
1/2 cup pecans, roughly chopped
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt (plus more to taste)
Freshly ground black pepper, to taste
Pinch of cayenne (optional)
1 teaspoon fresh thyme leaves (optional)
Zest of 1/2 lemon (optional)
Instructions
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment for easy cleanup.
In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, cinnamon, nutmeg, and lemon zest if using. Make sure every piece is lightly coated.
Spread the potatoes in a single layer on the prepared sheet. Roast for 20–25 minutes, until the edges are caramelized and the centers are tender. Give the pan a half-turn halfway through for even browning.
Remove from the oven. Drizzle with maple syrup and scatter the pecans over the potatoes. Return to the oven for 5–7 minutes, until the pecans are toasted and glaze looks glossy and sticky.
Finish with thyme and a final pinch of salt, if desired. Let the potatoes rest 5 minutes to let the flavors meld and the glaze set a little.
