- 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 1 cup feta cheese (crumbled)
- 1 sheet puff pastry
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- 1 egg (beaten)
- 1 pinch nutmeg
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, sauté the finely chopped onion in a drizzle of olive oil until translucent. Add minced garlic and heat until fragrant.
- Stir in the spinach and cook until wilted (if fresh) or heated through (if frozen). Remove from heat and cool slightly.
- In a bowl, combine the spinach mixture with crumbled feta, beaten egg, nutmeg, salt, and pepper. Mix well.
- On a lightly floured surface, roll out the puff pastry and cut into squares or circles (about 4 inches in diameter).
- Place a spoonful of spinach mixture in the center of each pastry. Fold over and seal the edges with a fork.
- Transfer the pastries to a lined baking sheet and brush tops with beaten egg.
- Bake for 20-25 minutes until golden brown and puffed.
Notes
For a healthier option, use whole wheat pastry dough or a vegan non-dairy cheese. Ensure the spinach is properly thawed and drained to avoid soggy pastries.
