  • 2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
  • 1 cup feta cheese (crumbled)
  • 1 sheet puff pastry
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 egg (beaten)
  • 1 pinch nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, sauté the finely chopped onion in a drizzle of olive oil until translucent. Add minced garlic and heat until fragrant.
  3. Stir in the spinach and cook until wilted (if fresh) or heated through (if frozen). Remove from heat and cool slightly.
  4. In a bowl, combine the spinach mixture with crumbled feta, beaten egg, nutmeg, salt, and pepper. Mix well.
  5. On a lightly floured surface, roll out the puff pastry and cut into squares or circles (about 4 inches in diameter).
  6. Place a spoonful of spinach mixture in the center of each pastry. Fold over and seal the edges with a fork.
  7. Transfer the pastries to a lined baking sheet and brush tops with beaten egg.
  8. Bake for 20-25 minutes until golden brown and puffed.

For a healthier option, use whole wheat pastry dough or a vegan non-dairy cheese. Ensure the spinach is properly thawed and drained to avoid soggy pastries.
