Ingredients

  • 1 cup Granulated Sugar (or superfine sugar)
  • 1/4 teaspoon Cream of Tartar (or lemon juice)
  • 1 teaspoon Vanilla Extract
  • Pinch of Salt

Instructions

  1. Preheat your oven to 225°F (110°C).
  2. Line two baking sheets with parchment paper.
  3. In a clean mixing bowl, add the egg whites and a pinch of salt. Beat on medium speed until soft peaks form (about 2-3 minutes).
  4. Add cream of tartar and continue mixing until stabilized.
  5. Gradually add sugar one tablespoon at a time until glossy stiff peaks form (6-8 minutes).
  6. Gently fold in vanilla extract.
  7. Pipe small rounds onto the baking sheets or dollop spoonfuls of meringue.
  8. Bake for 1 hour and leave in the oven for an additional hour to cool.
  9. Carefully peel meringue cookies off the parchment paper and serve.
