- 1/4 teaspoon Cream of Tartar (or lemon juice)

Instructions
- Preheat your oven to 225°F (110°C).
- Line two baking sheets with parchment paper.
- In a clean mixing bowl, add the egg whites and a pinch of salt. Beat on medium speed until soft peaks form (about 2-3 minutes).
- Add cream of tartar and continue mixing until stabilized.
- Gradually add sugar one tablespoon at a time until glossy stiff peaks form (6-8 minutes).
- Gently fold in vanilla extract.
- Pipe small rounds onto the baking sheets or dollop spoonfuls of meringue.
- Bake for 1 hour and leave in the oven for an additional hour to cool.
- Carefully peel meringue cookies off the parchment paper and serve.
