- 4 tablespoons butter (or coconut oil)
Instructions
- Preheat your oven to 425°F (220°C).
- Place a muffin tin in the oven to heat while preparing the batter.
- In a mixing bowl, whisk together the eggs, milk, and sugar until fully combined. Add flour, vanilla extract, and salt, stirring gently until no lumps remain.
- Remove the hot muffin tin from the oven and add a tablespoon of butter into each cup, allowing it to melt.
- Quickly pour the batter into the muffin tin, filling each cup halfway.
- Return the muffin tin to the oven and bake for 12-15 minutes until puffed up and golden brown.
- Remove from the oven, let them cool slightly, and serve immediately with your favorite toppings.
