  • 4 tablespoons butter (or coconut oil)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place a muffin tin in the oven to heat while preparing the batter.
  3. In a mixing bowl, whisk together the eggs, milk, and sugar until fully combined. Add flour, vanilla extract, and salt, stirring gently until no lumps remain.
  4. Remove the hot muffin tin from the oven and add a tablespoon of butter into each cup, allowing it to melt.
  5. Quickly pour the batter into the muffin tin, filling each cup halfway.
  6. Return the muffin tin to the oven and bake for 12-15 minutes until puffed up and golden brown.
