These Mushroom, Shallot and Herbed Goat Cheese Tarts are my go-to for a weeknight bite that feels special enough for guests but simple enough for a solo dinner. The pastry stays crisp, the mushrooms mellow and savory, and the goat cheese—soft, tangy, and bright with herbs—creates a silky, savory glow in every bite.

They’re designed to be snackable, shareable, and Pinterest-perfect, with a balance of textures: crisp pastry edges, tender mushrooms, and a creamy herbed cheese layer. Make a tray for a party, or bake a couple as a confident, crowd-pleasing starter that also shines as a light lunch with a peppery salad.

Ingredients

  • 1 sheet puff pastry, thawed and kept cold
  • 8 oz goat cheese with herbs, softened
  • 1 cup mushrooms, thinly sliced (cremini or button work well)
  • 2 shallots, finely minced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves, chopped (or 1/2 teaspoon dried)
  • 1 tablespoon fresh parsley, chopped
  • Salt and black pepper, to taste
  • 1 egg, beaten (for egg wash, optional)
  • 2 tablespoons cream or heavy cream (optional, for a smoother cheese filling)

Notes and swaps: use gluten-free puff pastry or phyllo cups for a gluten-free option. If you don’t have fresh thyme, a pinch of dried thyme works, but fresh herbs really lift the flavor. For a lighter version, skip the egg wash and bake a touch longer to dry out the edges a touch more.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment for easy cleanup.
  2. Cut the puff pastry into rounds (about 3 inches) or use pre-cut tartlets. Place them on the lined sheet and chill while you prepare the filling.
  3. In a skillet, heat the olive oil over medium heat. Add the shallots and sauté until translucent and sweet, about 2–3 minutes. Add the mushrooms and a pinch of salt, and cook until they release moisture and begin to brown, 6–8 minutes. Stir in the garlic and thyme for the last minute, then season to taste with pepper.
  4. In a bowl, whisk the softened goat cheese with the cream (if using) and the beaten egg until smooth and fluffy. Stir in the parsley and a pinch of salt until well combined.
  5. Assemble: Spoon a generous layer of mushroom mixture into each pastry round or tartlet shell. Top with a dollop of the herbed goat cheese, then give a light swirl with the back of a spoon to blend the flavors a little.
  6. Bake for 12–15 minutes, or until the pastry is golden and crisp and the cheese is just set. If the edges brown too quickly, cover loosely with foil and bake until the centers are just firm.
  7. Let cool for 5 minutes on a rack. Finish with a few extra parsley leaves and a light pinch of flaky sea salt, if desired.

Serving Suggestions
