Description

A satisfying and healthy take on traditional lasagna, packed with mushrooms, spinach, and rich cheeses.


Ingredients

  • Lasagna noodles
  • Mushrooms (cremini and shiitake)
  • Spinach (fresh or frozen)
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • 1 egg
  • Garlic (fresh cloves)
  • Onion (yellow or red)
  • Olive oil
  • Herbs (basil, oregano)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat, add chopped onion and minced garlic. Cook until translucent, then add mushrooms and cook until they release moisture. Finally, add spinach and cook until wilted. Season.
  3. In a medium bowl, combine ricotta cheese, an egg, and a pinch of salt. Mix until smooth.
  4. Layer the mushroom mixture, lasagna noodles, ricotta, mozzarella, and more vegetables in a baking dish. Repeat and finish with noodles and marinara sauce.
  5. Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
  6. Let it rest for 10 minutes before slicing.

Notes

Consider using whole grain or gluten-free noodles for a healthier alternative. Allow the lasagna to rest before cutting to avoid mess.
