Description

Ingredients

  • 4 Chicken Thighs (boneless)
  • 1 cup Basmati Rice
  • 2 tbsp Olive Oil
  • 1 Onion (chopped)
  • 4 cloves Garlic (minced)
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Paprika
  • 1/2 tsp Turmeric
  • 1/2 tsp Cinnamon
  • 2 cups Chicken Broth
  • 1 can Canned Tomatoes (diced)
  • Cilantro (for garnish)

Instructions

  1. In a bowl, combine chicken thighs, olive oil, minced garlic, cumin, coriander, paprika, turmeric, and cinnamon. Let marinate for at least 15 minutes.
  2. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
  3. Add the marinated chicken to the pot, browning on all sides for 5-7 minutes.
  4. Stir in basmati rice, diced tomatoes, and chicken broth. Season with salt and pepper, ensuring rice is submerged in liquid.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes or until rice is tender.
  6. Fluff rice with a fork and let rest for 5 minutes before serving. Garnish with fresh cilantro.

Notes

For a vegetarian version, substitute chicken with chickpeas and use vegetable broth.
