- 4 Chicken Thighs (boneless)
- 1 cup Basmati Rice
- 2 tbsp Olive Oil
- 1 Onion (chopped)
- 4 cloves Garlic (minced)
- 1 tsp Cumin
- 1 tsp Coriander
- 1 tsp Paprika
- 1/2 tsp Turmeric
- 1/2 tsp Cinnamon
- 2 cups Chicken Broth
- 1 can Canned Tomatoes (diced)
- Cilantro (for garnish)
Instructions
- In a bowl, combine chicken thighs, olive oil, minced garlic, cumin, coriander, paprika, turmeric, and cinnamon. Let marinate for at least 15 minutes.
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
- Add the marinated chicken to the pot, browning on all sides for 5-7 minutes.
- Stir in basmati rice, diced tomatoes, and chicken broth. Season with salt and pepper, ensuring rice is submerged in liquid.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes or until rice is tender.
- Fluff rice with a fork and let rest for 5 minutes before serving. Garnish with fresh cilantro.
Notes
For a vegetarian version, substitute chicken with chickpeas and use vegetable broth.
