Ingredients

  • 2 cups Jasmine rice
  • 1 cup Fresh pineapple, chopped
  • 1 diced Bell pepper
  • 1 chopped Carrot
  • 2 sliced Green onions
  • 3 tablespoons Soy sauce
  • 2 Eggs
  • 2 tablespoons Sesame oil
  • Salt and Pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and spread on a baking sheet to cool.
  2. Heat sesame oil in a large skillet or wok. Add the diced bell pepper, chopped carrot, and sliced green onions, sauté for 4-5 minutes until softened.
  3. Stir in chopped fresh pineapple and sauté for another 2 minutes. Push the vegetables to one side and scramble the eggs on the other side until fully cooked.
  4. Add the cooled rice and soy sauce, stir until everything is well combined, and cook for an additional 5-7 minutes.
  5. Season with salt and pepper to taste and garnish with additional green onions. Serve hot.

Notes

Serve with lime wedges and garnish with roasted cashews or peanuts for added crunch.
