- 2 cups Jasmine rice
- 1 cup Fresh pineapple, chopped
- 1 diced Bell pepper
- 1 chopped Carrot
- 2 sliced Green onions
- 3 tablespoons Soy sauce
- 2 Eggs
- 2 tablespoons Sesame oil
- Salt and Pepper to taste
Instructions
- Rinse jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and spread on a baking sheet to cool.
- Heat sesame oil in a large skillet or wok. Add the diced bell pepper, chopped carrot, and sliced green onions, sauté for 4-5 minutes until softened.
- Stir in chopped fresh pineapple and sauté for another 2 minutes. Push the vegetables to one side and scramble the eggs on the other side until fully cooked.
- Add the cooled rice and soy sauce, stir until everything is well combined, and cook for an additional 5-7 minutes.
- Season with salt and pepper to taste and garnish with additional green onions. Serve hot.

Serve with lime wedges and garnish with roasted cashews or peanuts for added crunch.
