Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
- Mash the ripe bananas in a bowl until smooth, leaving some small chunks for texture.
- Cream together the softened butter and sugar until light and fluffy.
- Incorporate the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, combine the flour, baking soda, and salt.
- Gradually stir the dry mixture into the wet ingredients until just combined.
- Gently fold in the shelled pistachios for even distribution.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 60 minutes or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter touch, substitute unsalted butter with coconut oil. Consider using walnuts if pistachios are unavailable.
