- 1/2 cup Unsalted Butter
- 3/4 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 2 Eggs
- 1 cup All-Purpose Flour
- 1 cup Pistachios, chopped
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking pan with parchment paper and lightly grease it.
- Melt the unsalted butter in a microwave-safe bowl and allow it to cool slightly.
- Whisk the melted butter with the brown sugar and granulated sugar until well combined.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Whisk together the all-purpose flour and salt in a separate bowl, then gradually mix it with the wet ingredients.
- Fold in the chopped pistachios.
- Pour the batter into the prepared pan, leveling it out with a spatula.
- Bake for 25 minutes or until edges are golden and a toothpick comes out slightly fudgy.
- Allow to cool before slicing into squares.
Notes
For a vegan alternative, substitute eggs with flaxseed meal mixed with water. To make gluten-free, use a gluten-free flour blend.
