  • 1/4 cup glucose syrup
  • 2 egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare all ingredients for a smooth process.
  2. Toast the pistachios in a dry skillet over medium heat for about 5 minutes.
  3. In a saucepan, combine sugar, glucose syrup, and a few tablespoons of water and cook until the sugar dissolves and boils.
  4. Whip the egg whites until soft peaks form, about 5-7 minutes.
  5. Once the syrup reaches 250°F (121°C), slowly pour it into the whipped egg whites, mixing on low speed, then increase to high until thick and glossy.
  6. Fold in the toasted pistachios and vanilla extract.
  7. Drop spoonfuls of the nougat mixture onto a baking mat, shaping them into clusters.
  8. Apply gold leaf with tweezers once the clusters have cooled slightly.
  9. Let the nougat clusters cool completely, about 1 hour.
