- 2 egg whites

Instructions
- Prepare all ingredients for a smooth process.
- Toast the pistachios in a dry skillet over medium heat for about 5 minutes.
- In a saucepan, combine sugar, glucose syrup, and a few tablespoons of water and cook until the sugar dissolves and boils.
- Whip the egg whites until soft peaks form, about 5-7 minutes.
- Once the syrup reaches 250°F (121°C), slowly pour it into the whipped egg whites, mixing on low speed, then increase to high until thick and glossy.
- Fold in the toasted pistachios and vanilla extract.
- Drop spoonfuls of the nougat mixture onto a baking mat, shaping them into clusters.
- Apply gold leaf with tweezers once the clusters have cooled slightly.
- Let the nougat clusters cool completely, about 1 hour.
