Description

For the Casserole Base:

2 cups cooked, shredded chicken

1 can (10.5 oz) cream of chicken soup

½ cup sour cream

½ cup milk

1 cup shredded cheddar cheese

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 cup frozen mixed vegetables (optional)

For the Biscuit Topping:

1 Red Lobster Cheddar Bay Biscuit mix (11.36 oz)

¾ cup milk

½ cup shredded cheddar cheese

¼ cup melted butter (for brushing)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  2. In a large bowl, mix shredded chicken, soup, sour cream, milk, cheddar cheese, garlic and onion powder, salt, pepper, and vegetables.

  3. Spread the creamy filling evenly in the prepared dish.

  4. In another bowl, mix the biscuit mix, milk, and cheese just until combined.

  5. Drop the biscuit mixture in spoonfuls over the filling, leaving small gaps.

  6. Bake for 25–30 minutes, until biscuits are puffed and golden and the filling is bubbling.

  7. Melt butter, mix with seasoning packet, and brush over baked biscuits.

  8. Let rest 5–10 minutes before serving.

Notes

Substitute turkey for chicken for a delicious post-holiday twist.

For a lighter version, use low-fat sour cream and reduced-fat cheese.

Make it ahead: assemble filling and refrigerate for 24 hours; add biscuit topping right before baking.

To freeze, assemble (unbaked), wrap tightly, and freeze up to 2 months. Thaw overnight before baking.
