  • 4 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • Food coloring (red and white)
  • 1/2 cup butter (softened)
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon flavoring extract (e.g., vanilla or peppermint)

Instructions

  1. Sift together almond flour and confectioners’ sugar.
  2. Whip egg whites until frothy, then gradually add granulated sugar until stiff peaks form.
  3. Gently fold the almond flour mixture into the whipped egg whites.
  4. Divide batter for coloring and mix in food coloring.
  5. Pipe small circles onto parchment-lined baking sheet.
  6. Let sit at room temperature for 30 to 60 minutes.
  7. Bake at 300°F (150°C) for 15-18 minutes.
  8. Cool completely on baking sheet, then transfer to wire rack.
  9. Make the filling by creaming together butter and powdered sugar, then add flavoring.
  10. Assemble by pairing shells and adding filling.
