1 tbsp tomato paste

2 tbsp olive oil

Instructions

  • Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly oil it.

  • Mix the kofta base: In a large bowl, combine ground chicken, red onion, garlic, parsley, cumin, paprika, oregano, cinnamon, tomato paste, olive oil, salt, and pepper. Gently mix with your hands until just combined — don’t overwork it.

  • Shape or spread: Either form small oval-shaped kofta logs or press the mixture evenly across the sheet pan (about ½ inch thick).

  • Bake: Cook for 18–22 minutes, or until golden brown and cooked through (165°F internal temp). Broil for 2–3 minutes at the end for extra caramelization.

  • Rest & serve: Let the kofta rest for 5 minutes before slicing or serving. Enjoy warm with pita, yogurt sauce, and a fresh salad.

Notes
