Ingredients
For the Kofta Mixture:
1 lb ground chicken
½ small red onion, finely diced (or grated for smoother texture)
2 cloves garlic, minced
¼ cup fresh parsley, chopped
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried oregano
¼ tsp ground cinnamon
1 tbsp tomato paste
2 tbsp olive oil
Salt & black pepper, to taste

Instructions
Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly oil it.
Mix the kofta base: In a large bowl, combine ground chicken, red onion, garlic, parsley, cumin, paprika, oregano, cinnamon, tomato paste, olive oil, salt, and pepper. Gently mix with your hands until just combined — don’t overwork it.
Shape or spread: Either form small oval-shaped kofta logs or press the mixture evenly across the sheet pan (about ½ inch thick).
Bake: Cook for 18–22 minutes, or until golden brown and cooked through (165°F internal temp). Broil for 2–3 minutes at the end for extra caramelization.
