Ingredients

  • 1 can Canned Tuna, drained
  • 1 can Canned Chickpeas, rinsed and drained
  • 1 cup Cherry Tomatoes, diced
  • 1 Cucumber, diced
  • 1/2 Red Onion, diced
  • 1/4 cup Fresh Parsley, chopped
  • 2 tbsp Lemon Juice
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Drain the canned tuna and flake it into a medium mixing bowl.
  2. Rinse and drain the canned chickpeas, then add them to the bowl with the tuna.
  3. Dice the cherry tomatoes, cucumber, and red onion, adding them to the bowl.
  4. Chop the fresh parsley and mix it into the salad.
  5. Drizzle the lemon juice and olive oil over the salad, then season with salt and pepper.
  6. Mix everything together gently until well combined.
  7. Taste and adjust seasoning as needed. If desired, chill in the fridge for 30 minutes before serving.

Notes

For a creamier salad, consider using Greek yogurt instead of olive oil.
