Smokey Onion Dip elevates simple spread with creamy tangy depth crowdpleaser quick prep bold flavor for parties and game nights Great for chips
Ingredients
Scale
2 large yellow onions, thinly sliced
2 tbsp olive oil or unsalted butter
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup shredded sharp cheddar
1/4 cup shredded smoked Gouda or extra cheddar
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/4 tsp chipotle powder (optional)
Salt to taste
Freshly ground black pepper to taste
Crumbled bacon, optional
Chopped chives, optional
Instructions
Caramelize the onions: In a skillet, heat the onions with the oil or butter over medium heat. Add a pinch of salt and cook slowly, stirring occasionally, for 25–30 minutes until they’re deeply amber and sweet-smelling. Treat it like a little aromatherapy for your kitchen.
Make the creamy base: In a large bowl, beat the cream cheese until smooth. Fold in the sour cream and mayonnaise until fully combined for a velvety foundation. Stir in the cheddar and smoked Gouda (or extra cheddar) until the cheese is finely dispersed.
Season for depth: Add the smoked paprika, garlic powder, and chipotle powder (if using). Season with salt and pepper, tasting as you go so you hit that perfect balance of smoky and creamy.
Combine the onions: Fold the caramelized onions into the cheese mixture until evenly distributed. If you’re adding bacon, stir it in now. The result should be a glossy, thick mixture that can hold its shape a little when scooped.
Bake to bubbly perfection: Transfer the dip to a small baking dish. Bake at 375°F (190°C) for 15–20 minutes, until the edges are bubbling and the top golden. If you like a crisp top, broil for 1–2 minutes at the end.
Rest and serve: Let the dip rest for 5 minutes so it firms up slightly and becomes easier to scoop. Serve warm with your choice of dippers.
