Instructions

  1. Prepare the Ingredients: Peel and dice the potatoes, chop the onions, celery, and carrots, and mince the garlic.
  2. Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5-7 minutes until soft.
  3. Add Garlic: Stir in the minced garlic and sauté for another 1-2 minutes.
  4. Incorporate Potatoes and Broth: Add the diced potatoes and broth. Bring to a boil, then lower the heat and simmer for about 20 minutes.
  5. Blend the Soup: Use an immersion or regular blender to blend the soup until creamy and smooth.
