Ingredients
- Potatoes (about 4 cups, peeled and diced)
- Garlic (6 cloves, minced)
- Onion (1 large, chopped)
- Celery (2 stalks, diced)
- Carrots (2 medium, diced)
- Vegetable or Chicken Broth (4 cups)
- Heavy Cream (1 cup)
- Salt and Pepper (to taste)
- Fresh Herbs (such as parsley or thyme, for garnish)
Instructions
- Prepare the Ingredients: Peel and dice the potatoes, chop the onions, celery, and carrots, and mince the garlic.
- Sauté the Vegetables: In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery. Sauté for about 5-7 minutes until soft.
- Add Garlic: Stir in the minced garlic and sauté for another 1-2 minutes.
- Incorporate Potatoes and Broth: Add the diced potatoes and broth. Bring to a boil, then lower the heat and simmer for about 20 minutes.
- Blend the Soup: Use an immersion or regular blender to blend the soup until creamy and smooth.
- Add Cream and Seasonings: Return the blended soup to low heat and stir in heavy cream. Season with salt and pepper.
- Serve and Garnish: Ladle into bowls and garnish with fresh herbs.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk. Additional spices can be added for extra flavor.
