  • 4 large Sweet Potatoes
  • ½ cup Butter
  • ¾ cup Brown Sugar
  • â…“ cup Maple Syrup
  • ½ cup Milk
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1 cup Pecans, chopped
  • Mini Marshmallows (optional)

Instructions

  1. Peel and chop sweet potatoes into chunks. Boil in a large pot for about 15-20 minutes until fork-tender.
  2. Drain the sweet potatoes and let them cool slightly. In a large mixing bowl, combine the sweet potatoes with butter, brown sugar, maple syrup, milk, eggs, vanilla extract, and cinnamon. Blend until smooth and creamy.
  3. Preheat your oven to 350°F (175°C).
  4. Transfer the sweet potato mixture into a greased 9×13-inch baking dish and smooth the top.
  5. In a mixing bowl, combine pecans and mini marshmallows (if using) and sprinkle them over the sweet potato layer.
  6. Bake for 30-35 minutes, or until the topping is golden brown. Allow to rest for about 10 minutes before serving.

Notes

For a lower glycemic option, swap brown sugar with coconut sugar. This casserole freezes well and can be made ahead of time.
