- 4 large Sweet Potatoes
- ½ cup Butter
- ¾ cup Brown Sugar
- â…“ cup Maple Syrup
- ½ cup Milk
- 2 large Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Ground Cinnamon
- 1 cup Pecans, chopped
- Mini Marshmallows (optional)
Instructions
- Peel and chop sweet potatoes into chunks. Boil in a large pot for about 15-20 minutes until fork-tender.
- Drain the sweet potatoes and let them cool slightly. In a large mixing bowl, combine the sweet potatoes with butter, brown sugar, maple syrup, milk, eggs, vanilla extract, and cinnamon. Blend until smooth and creamy.
- Preheat your oven to 350°F (175°C).
- Transfer the sweet potato mixture into a greased 9×13-inch baking dish and smooth the top.
- In a mixing bowl, combine pecans and mini marshmallows (if using) and sprinkle them over the sweet potato layer.
- Bake for 30-35 minutes, or until the topping is golden brown. Allow to rest for about 10 minutes before serving.
Notes
For a lower glycemic option, swap brown sugar with coconut sugar. This casserole freezes well and can be made ahead of time.
