- 6 Large Eggs
- 1/3 cup Mayonnaise
- 1 tsp Dijon Mustard
- 1 tsp White Vinegar
- 1/2 tsp Smoked Paprika
- 2 tbsp Fresh Herbs (Chives or Dill)
- 2 tbsp Bacon Bits (or crispy shallots for vegetarian option)
- 1 tbsp Pickles or Relish
- Salt & Pepper to taste
Instructions
- Boil the eggs in a saucepan covered with cold water and bring to a boil. Cover and remove from heat, letting them sit for 10-12 minutes.
- Transfer the eggs to an ice bath for at least 5 minutes, then peel under running water.
- Slice each egg in half and remove the yolks. Mash yolks with mayonnaise, Dijon mustard, white vinegar, smoked paprika, salt, and pepper until smooth.
- Fold in herbs, bacon bits, and pickles or relish into the yolk mixture.
- Fill the egg whites with the yolk mixture using a piping bag or spoon.
- Garnish with smoked paprika and fresh herbs for presentation.
