Ingredients

  • 6 Large Eggs
  • 1/3 cup Mayonnaise
  • 1 tsp Dijon Mustard
  • 1 tsp White Vinegar
  • 1/2 tsp Smoked Paprika
  • 2 tbsp Fresh Herbs (Chives or Dill)
  • 2 tbsp Bacon Bits (or crispy shallots for vegetarian option)
  • 1 tbsp Pickles or Relish
  • Salt & Pepper to taste

Instructions

  1. Boil the eggs in a saucepan covered with cold water and bring to a boil. Cover and remove from heat, letting them sit for 10-12 minutes.
  2. Transfer the eggs to an ice bath for at least 5 minutes, then peel under running water.
  3. Slice each egg in half and remove the yolks. Mash yolks with mayonnaise, Dijon mustard, white vinegar, smoked paprika, salt, and pepper until smooth.
  4. Fold in herbs, bacon bits, and pickles or relish into the yolk mixture.
  5. Fill the egg whites with the yolk mixture using a piping bag or spoon.
  6. Garnish with smoked paprika and fresh herbs for presentation.
