A delicious combination of juicy steak bites and roasted vegetables, perfect for a nutritious and satisfying meal.


Ingredients

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 medium sweet potatoes, peeled and cubed
  • 2 bell peppers, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp paprika
  • Sea salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes and cut into bite-sized cubes. Slice the bell peppers into strips and set aside.
  2. Toss the sweet potatoes in a mixing bowl with 1 tablespoon of olive oil, sea salt, black pepper, and half of the paprika.
  3. Spread the sweet potatoes in a single layer on a baking sheet. Roast for 20-25 minutes or until fork-tender and golden brown, stirring halfway through.
  4. While the sweet potatoes are roasting, season the steak bites in a bowl with garlic, onion powder, remaining paprika, sea salt, and black pepper.
  5. Heat a skillet over medium-high heat and add the remaining olive oil. Add the seasoned steak bites and sear for 2-3 minutes on each side until desired doneness.
  6. Once cooked, serve steak bites alongside the roasted sweet potatoes and bell peppers.

Notes

Serve with fresh herbs or a yogurt-based dipping sauce for added flavor.
