Ingredients

- 1 lb sirloin steak, cut into bite-sized pieces
- 2 medium sweet potatoes, peeled and cubed
- 2 bell peppers, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp paprika
- Sea salt to taste
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wash and peel the sweet potatoes and cut into bite-sized cubes. Slice the bell peppers into strips and set aside.
- Toss the sweet potatoes in a mixing bowl with 1 tablespoon of olive oil, sea salt, black pepper, and half of the paprika.
- Spread the sweet potatoes in a single layer on a baking sheet. Roast for 20-25 minutes or until fork-tender and golden brown, stirring halfway through.
- While the sweet potatoes are roasting, season the steak bites in a bowl with garlic, onion powder, remaining paprika, sea salt, and black pepper.
- Heat a skillet over medium-high heat and add the remaining olive oil. Add the seasoned steak bites and sear for 2-3 minutes on each side until desired doneness.
- Once cooked, serve steak bites alongside the roasted sweet potatoes and bell peppers.
Notes
Serve with fresh herbs or a yogurt-based dipping sauce for added flavor.
