Instructions
- Prepare the strawberries by washing, hulling, and chopping them into quarters. Toss with honey or maple syrup and let sit for 10-15 minutes.
- In a blender, combine cottage cheese, sweetener, vanilla extract, lemon juice, and salt. Blend until smooth and creamy.
- Fold in the macerated strawberries gently, avoiding a full puree.
- Transfer the mixture to an airtight container and freeze.
- Allow the ice cream to freeze for at least 4 hours, stirring every hour for the first 3 hours.
