- 1/4 cup powdered sugar (for whipped cream)
Instructions
- Preheat the oven to 350°F (175°C).
- Crush the Oreo cookies into fine crumbs and mix with melted butter.
- Press the mixture into the bottom of a lined 9×9-inch baking dish.
- Beat the cream cheese until creamy and smooth.
- Gradually add granulated sugar and vanilla extract, mixing until fully incorporated.
- Add eggs one at a time, mixing just until combined.
- Fold in diced strawberries gently.
- Spread cheesecake mixture evenly over the pre-baked Oreo crust.
- Bake for 30-35 minutes until the center is set but slightly jiggly.
- Allow to cool at room temperature for about an hour.
- Refrigerate for at least 2 hours to fully set.
- Whip the cream with powdered sugar until stiff peaks form.
- Spread whipped cream over the cooled cheesecake, slice into bars, and serve chilled.
