1 cup plain Greek yogurt (2% or full-fat for creaminess)
1/3 cup heavy cream
2–3 tablespoons honey or maple syrup (adjust to sweetness)
1 teaspoon vanilla extract
1 tablespoon fresh lemon juice (optional, for brightness)
Pinch of salt
Optional: 1/2 teaspoon lemon zest for extra zing
Optional: 1 teaspoon gelatin powder plus 2 tablespoons cold water (for a firmer set)
Instructions
If using gelatin, bloom 1 teaspoon gelatin in 2 tablespoons cold water for 5 minutes. Then warm gently until fully dissolved and set aside.
