  • If using gelatin, bloom 1 teaspoon gelatin in 2 tablespoons cold water for 5 minutes. Then warm gently until fully dissolved and set aside.
  • Puree the strawberries in a blender or with a immersion blender until smooth. For a silkier mousse, strain through a fine mesh to remove seeds, but leaving a few seeds is perfectly fine for texture.
