- 2 Cornish Game Hens
- 2 tablespoons Olive Oil
- 2 Shallots, finely chopped
- 4 cloves Garlic, minced
- 1 cup Wild Rice, cooked
- 1 cup Dried Cranberries
- ½ cup Pecans, chopped
- 2 teaspoons Fresh Thyme, chopped
- ½ cup Chicken Stock
- Salt & Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C). Rinse the Cornish game hens under cold water and pat them dry with paper towels.
- Cook the wild rice as per package instructions, approximately 35-40 minutes.
- In a skillet over medium heat, add olive oil. Sauté the chopped shallots and minced garlic until translucent and fragrant, about 5 minutes.
- In a large bowl, combine the cooked rice, sautéed shallots and garlic, dried cranberries, chopped pecans, fresh thyme, and chicken stock. Season with salt and pepper to taste and mix well.
- Spoon the stuffing into the cavity of each Cornish game hen, leaving some room for expansion.
- Place the stuffed hens in a roasting pan, breast side up. Brush with olive oil and season with salt and pepper. Roast for about 1 hour until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Remove from the oven and allow the hens to rest for 10 minutes before serving.
Notes
Serve with seasonal vegetables and a light salad for a balanced meal. Ensure the hens are patted dry before seasoning to achieve crispy skin.
