Description
A heartwarming Swedish Meatball Soup that combines savory meatballs with a luxurious broth, perfect for cozy dinners.
Ingredients
Scale
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 cup heavy cream
- 2 potatoes, diced
- 2 carrots, chopped
- Salt, to taste
- Pepper, to taste
- Pink peppercorns, to taste
- 1 tsp allspice
- Fresh dill, for garnish
Instructions
- In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, and finely chopped onion. Season with salt, pepper, and allspice. Mix until well incorporated.
- Roll the mixture into small balls, about 1 inch in diameter. Sear the meatballs in a large skillet over medium heat until golden-brown.
- Remove the meatballs and set aside. In the same skillet, add diced potatoes and carrots, and sauté for 5 minutes.
- Pour in the broth, scraping the skillet bottom to release any flavorful bits. Bring to a boil.
- Lower the heat, gently add the meatballs back into the pot, and simmer for 20 minutes.
- Stir in the heavy cream and let the soup simmer for another 5 minutes.
- Serve hot, garnished with fresh dill.
Notes
For a lighter version, use half-and-half or coconut cream. To make it vegetarian, replace ground beef with ground turkey or use vegetable broth.
