Description

A heartwarming Swedish Meatball Soup that combines savory meatballs with a luxurious broth, perfect for cozy dinners.

Ingredients

Scale
  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 cup heavy cream
  • 2 potatoes, diced
  • 2 carrots, chopped
  • Salt, to taste
  • Pepper, to taste
  • Pink peppercorns, to taste
  • 1 tsp allspice
  • Fresh dill, for garnish

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, and finely chopped onion. Season with salt, pepper, and allspice. Mix until well incorporated.
  2. Roll the mixture into small balls, about 1 inch in diameter. Sear the meatballs in a large skillet over medium heat until golden-brown.
  3. Remove the meatballs and set aside. In the same skillet, add diced potatoes and carrots, and sauté for 5 minutes.
  4. Pour in the broth, scraping the skillet bottom to release any flavorful bits. Bring to a boil.
  5. Lower the heat, gently add the meatballs back into the pot, and simmer for 20 minutes.
  6. Stir in the heavy cream and let the soup simmer for another 5 minutes.
  7. Serve hot, garnished with fresh dill.

Notes

For a lighter version, use half-and-half or coconut cream. To make it vegetarian, replace ground beef with ground turkey or use vegetable broth.
