Ingredients

1 tablespoon olive oil
For the Chicken:
1 large chicken breast (about 8 oz), cooked and sliced
1 teaspoon jerk seasoning

For the Sweet Chili Garlic Sauce:
⅓ cup sweet chili sauce
2 cloves garlic, minced
1 teaspoon soy sauce
1 tablespoon brown sugar (optional)
½ teaspoon crushed red pepper flakes
For the Toppings:
1 cup shredded mozzarella or Chihuahua cheese
½ cup pineapple chunks
¼ cup diced red onion
¼ cup diced red bell pepper
2 tablespoons fresh cilantro, chopped

Instructions
Preheat oven to 425°F (220°C).
