Ingredients

  • 3 medium Sweet Potatoes, peeled and chopped
  • 1/4 cup Fresh Sage, chopped
  • 1/2 cup Butter (or plant-based butter)
  • 1 cup Cream (or coconut cream)
  • 1/3 cup Sugar (or maple syrup)
  • 2 large Eggs (or flaxseed/chia seed mixture)
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • a pinch Nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in salted water for 15-20 minutes until fork-tender.
  3. Drain and mash the sweet potatoes until smooth.
  4. In a large bowl, mix the mashed sweet potatoes with sage, butter, cream, sugar, eggs, cinnamon, salt, and nutmeg until well blended.
  5. Prepare the pie crust according to package instructions or roll out a homemade crust into a 9-inch pie dish, pre-bake for 10 minutes.
  6. Pour the sweet potato mixture into the pre-baked pie crust.
  7. Bake for 30-35 minutes until set in the center and edges are slightly golden.
  8. Cool for 10 minutes before slicing and serving.

Notes

Serve topped with crumbled goat cheese, sprinkled with toasted pecans, or accompanied by whipped coconut cream.
