- 3 medium Sweet Potatoes, peeled and chopped
- 1/4 cup Fresh Sage, chopped
- 1/2 cup Butter (or plant-based butter)
- 1 cup Cream (or coconut cream)
- 1/3 cup Sugar (or maple syrup)
- 2 large Eggs (or flaxseed/chia seed mixture)
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Salt
- a pinch Nutmeg
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes in salted water for 15-20 minutes until fork-tender.
- Drain and mash the sweet potatoes until smooth.
- In a large bowl, mix the mashed sweet potatoes with sage, butter, cream, sugar, eggs, cinnamon, salt, and nutmeg until well blended.
- Prepare the pie crust according to package instructions or roll out a homemade crust into a 9-inch pie dish, pre-bake for 10 minutes.
- Pour the sweet potato mixture into the pre-baked pie crust.
- Bake for 30-35 minutes until set in the center and edges are slightly golden.
- Cool for 10 minutes before slicing and serving.
Notes
Serve topped with crumbled goat cheese, sprinkled with toasted pecans, or accompanied by whipped coconut cream.
