- 2 cups all-purpose flour (or gluten-free flour blend)
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- 2 cups mashed sweet potatoes
- ½ cup brown sugar or maple syrup
- 2 eggs (or flax eggs for a vegan option)
Instructions
- Peel and chop sweet potatoes into cubes. Boil or steam them until soft, approximately 15-20 minutes. Drain and mash until smooth.
- In a large mixing bowl, combine flour, baking powder, cinnamon, and salt. Whisk until well blended.
- In another bowl, mix mashed sweet potatoes, brown sugar or maple syrup, and eggs (or flax eggs). Beat until smooth.
- Gradually add the dry ingredients into the wet mixture and stir until just combined.
- Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment.
- Pour the batter into the prepared loaf pan.
- Bake for 45 minutes or until a toothpick inserted comes out clean.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack. Allow to cool for another 30 minutes before slicing.
Notes
Avoid overmixing to prevent a dense loaf. Ensure the bread cools completely before storing.
