Instructions
- Prepare the Rice: Cook jasmine rice according to package instructions or use day-old rice.
- Sauté the Vegetables: In a pan over medium heat, sauté chopped vegetables in oil for 3-4 minutes.
- Scramble the Eggs: Push vegetables aside, add eggs, cook until soft curds form, then mix with veggies.
- Add Pineapple and Seasoning: Stir in pineapple, soy sauce, and curry powder; cook for 2 minutes.
- Incorporate the Rice: Fold in cooked rice, stir for 5-6 minutes to mix thoroughly.
- Garnish: Remove from heat, stir in green onions, cashews, and drizzle with lime juice before serving.
