Description

Delicious cookies infused with coffee and cream, inspired by the classic tiramisu dessert.


Ingredients

  • 1 3/4 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3/4 cup Unsalted Butter, softened
  • 2 large Eggs
  • 2 tbsp Espresso Powder
  • 1 tsp Vanilla Extract
  • 8 oz Mascarpone Cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  7. Fold in the espresso powder and mascarpone cheese gently.
  8. Scoop dough onto prepared baking sheets, spacing 2 inches apart. Bake for 12-15 minutes.
  9. Cool cookies on the baking sheets for a few minutes before transferring to a wire rack.

Notes

For a vegan option, substitute eggs with flax or chia eggs and use vegan butter.
