- 1 3/4 cups All-Purpose Flour
- 1/2 cup Unsweetened Cocoa Powder
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 cup Unsalted Butter, softened
- 2 large Eggs
- 2 tbsp Espresso Powder
- 1 tsp Vanilla Extract
- 8 oz Mascarpone Cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- Cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Fold in the espresso powder and mascarpone cheese gently.
- Scoop dough onto prepared baking sheets, spacing 2 inches apart. Bake for 12-15 minutes.
- Cool cookies on the baking sheets for a few minutes before transferring to a wire rack.
Notes
For a vegan option, substitute eggs with flax or chia eggs and use vegan butter.
