  • 1 Onion, diced
  • 1 tbsp Sesame Oil
  • 2 Green Onions, chopped

Instructions

  1. Prepare the Noodles: Cook the udon noodles according to the package instructions. Drain and set aside.
  2. Sauté Aromatics: In a large pan or wok, heat sesame oil over medium heat. Add onions and garlic, stirring until translucent.
  3. Brown the Beef: Add ground beef, breaking it apart, and cook until browned. Drain excess fat if necessary.
  4. Add Spinach and Seasonings: Stir in spinach, ginger, and soy sauce, cooking until spinach wilts.
  5. Combine with Noodles: Toss in cooked udon noodles, mixing until well-coated.
  6. Garnish and Serve: Remove from heat, top with green onions and additional sesame oil, and serve hot.

Notes

For a leaner dish, substitute ground beef with ground turkey or chicken.
