- 1 lb Ground Beef
- 4 cups Fresh or Frozen Spinach
- 3 Cloves Garlic, minced
- 3 tbsp Soy Sauce
- 1 tbsp Ginger, freshly grated
- 1 Onion, diced
- 1 tbsp Sesame Oil
- 2 Green Onions, chopped
Instructions
- Prepare the Noodles: Cook the udon noodles according to the package instructions. Drain and set aside.
- Sauté Aromatics: In a large pan or wok, heat sesame oil over medium heat. Add onions and garlic, stirring until translucent.
- Brown the Beef: Add ground beef, breaking it apart, and cook until browned. Drain excess fat if necessary.
- Add Spinach and Seasonings: Stir in spinach, ginger, and soy sauce, cooking until spinach wilts.
- Combine with Noodles: Toss in cooked udon noodles, mixing until well-coated.
- Garnish and Serve: Remove from heat, top with green onions and additional sesame oil, and serve hot.
Notes
For a leaner dish, substitute ground beef with ground turkey or chicken.
