Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan and line with parchment for easy lifting.
In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, and salt. Break up any lumps so everything blends evenly.
In a separate bowl, whisk the wet ingredients: milk, melted butter, eggs, vanilla (and orange zest or almond extract if using). Make sure the butter isn’t hot, or it’ll scramble the eggs.
Combine the wet and dry ingredients just until you see no dry streaks. It’s okay if the batter looks a little thick. Fold in the sprinkles gently to avoid breaking them and to keep color bright.
Pour the batter into the prepared loaf pan. If you like, sprinkle a few extra sprinkles on top for a festive crust. Bake for 45–55 minutes, or until the top is golden and a toothpick inserted into the center comes out with a few moist crumbs.
Cool the loaf in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing. This helps the bread set and slice neatly.
