Ingredients

  • 1 package vegan puff pastry
  • 2 cups fresh strawberries, sliced
  • 1 cup vegan cream cheese
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the fresh strawberries. Toss with a tablespoon of maple syrup and let them macerate for 10 minutes.
  3. Roll out the puff pastry on a lightly floured surface and cut into 4×6 inch rectangles.
  4. In a bowl, mix the vegan cream cheese, a tablespoon of maple syrup, vanilla extract, and lemon juice until smooth.
  5. Assemble the Danishes by placing a dollop of the cream cheese filling in the center of each pastry piece, topping with strawberry slices and folding over the edges.
  6. Bake for 20 minutes or until golden and puffed.
  7. Allow to cool slightly before dusting with powdered sugar and serve warm or at room temperature.

Notes

For a healthier option, you can use coconut sugar instead of powdered sugar.
