- 1 package vegan puff pastry
- 2 cups fresh strawberries, sliced
- 1 cup vegan cream cheese
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and slice the fresh strawberries. Toss with a tablespoon of maple syrup and let them macerate for 10 minutes.
- Roll out the puff pastry on a lightly floured surface and cut into 4×6 inch rectangles.
- In a bowl, mix the vegan cream cheese, a tablespoon of maple syrup, vanilla extract, and lemon juice until smooth.
- Assemble the Danishes by placing a dollop of the cream cheese filling in the center of each pastry piece, topping with strawberry slices and folding over the edges.
- Bake for 20 minutes or until golden and puffed.
- Allow to cool slightly before dusting with powdered sugar and serve warm or at room temperature.
Notes
For a healthier option, you can use coconut sugar instead of powdered sugar.
