Ingredients

- 1 cup Plain Yogurt (or Greek Yogurt)
- 1 ½ cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1 ½ tsp Baking Powder
- 3 large Eggs (or flaxseed eggs)
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1/2 cup Butter (or oil or vegan butter)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or oil and dust with flour.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, blend yogurt, sugar, eggs, and vanilla until smooth.
- Gradually fold in the dry ingredients into the wet mixture.
- Melt the butter and fold it into the batter.
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 25-30 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve plain, with powdered sugar, or topped with fresh berries.
Notes
Avoid overmixing to keep the cake light and fluffy.
