Description

A light and fluffy yogurt-based cake that’s easy to make and delights the senses.


Ingredients

  • 1 cup Plain Yogurt (or Greek Yogurt)
  • 1 ½ cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 ½ tsp Baking Powder
  • 3 large Eggs (or flaxseed eggs)
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/2 cup Butter (or oil or vegan butter)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or oil and dust with flour.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, blend yogurt, sugar, eggs, and vanilla until smooth.
  5. Gradually fold in the dry ingredients into the wet mixture.
  6. Melt the butter and fold it into the batter.
  7. Pour the batter into the prepared pan, smoothing the top.
  8. Bake for 25-30 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve plain, with powdered sugar, or topped with fresh berries.

Notes

Avoid overmixing to keep the cake light and fluffy.
